For the Fourth of July (America’s Independence Day) we are having people over to grill and celebrate the day in general. I think it is a great time to remember those who fight for our freedom all over the world today and in the past.
My father served in Vietnam and it changed the person that he is today. He did what he thought was right at the time. He believed deep down in his heart that he was protecting our freedoms and rights. While that point may have been argued yesterday, is argued today and will be argued tomorrow, I honor him because he served his country.
So what are we doing for fun tomorrow? Well we are having friends over to grill. We of course bought way too much food, which is typical for us, no one walks away from this house hungry and if they do it is their own fault.
Today I am going to share one of my favorite cookout recipes. I put it together in the crock pot and let it cook all day long
Three Bean Bake
1-pound ground beef
½ cup chopped onion
¼ cup chopped green peppers (I substitute a can of green chilies)
4 slices bacon, chopped and crumbled
1 16 oz can of chili beans
1 16 oz can of kidney beans (drained)
1 16 oz can of pork and beans
¼ cup ketchup
2 tablespoons brown sugar
1-tablespoon vinegar
1-tablespoon mustard
1-teaspoon worcestshire sauce
Brown ground beef, onion, and green peppers (or chilies) put in three quart casserole with other ingredients and bake at 350 for one hour or in crock pot on low for all day.
This recipe feeds quite a few people and is easy to expand if you need to feed more.
After our cookout we are headed out to the fireworks display at the lake. I love fireworks. One thing I hope to share with Punkin someday is a good fireworks display that we pick out. I enjoy them that much and enjoyed them with my grandmother as well. So someday, I’ll pass on those great memories to him.
